I think you've underestimated the difficulty of finding a SIP client that is easy to set up, handles NAT issues transparently, and works flawlessly with PUSH technology for iPhones and Android devices. I would think a dozen or two should be fine but I never tested it. Keep an eye on your CPU, watch the bandwidth and if things start going to heck you’ve reached the limit for your setup.
